During the official Florida Stone Crab season, October 15 through May 1, our goal is to prepare and dispatch claws promptly to help preserve their freshness and quality. Outside the season, selected products may be offered frozen, depending on availability, so their quality can be maintained for sale at other times of the year.
If your claws arrive refrigerated, we recommend enjoying them as soon as possible for the best texture and flavor, preferably within the first 24 to 48 hours. Keep them properly refrigerated at all times and follow the storage guidance provided with your order.
Joshua Stone Crab may offer several claw sizes depending on the time of year, catch, and available inventory. Current sizes and package options are displayed in our online store.
The number of pieces per pound depends on claw size. Larger claws naturally result in fewer pieces per pound. As a general guide, Super Colossal may average about 1 per pound; Colossal, 1–2; Jumbo, 2–3; Large, 4–5; and Medium, approximately 6 7. These are estimates because individual claws naturally vary in weight.
Yes. Medium claws work especially well as appetizers or sharing portions, but they can also be served as an entrée. The amount to order should be adjusted according to your guests' appetites and the side dishes included with the meal.
As a starting point, one 8 oz container may be enough for approximately two people. If your guests prefer extra sauce or you are serving a larger group, we suggest ordering additional containers.

When the product description states that the claws are ready to serve, they have already been cooked. Keep them chilled until serving, crack the shell, and enjoy them with your preferred sauce or accompaniment. Always follow the instructions for the specific product purchased.
Place them in the refrigerator immediately after delivery and keep them in one of the coldest areas in an appropriate container. Do not leave them at room temperature. If you use ice to keep them cold, avoid allowing the claws to sit submerged in melted water.
For best quality, crack only the pieces you plan to eat. If opened claws remain, refrigerate them immediately in a suitable container and consume them as soon as , provided they have remained properly chilled.
Not necessarily. Shells can naturally display dark spots, marks, and minor imperfections from the marine environment. These exterior characteristics alone do not mean the meat is affected. If the product has an unusual odor, improper temperature, or another concerning condition, do not consume it and contact Customer Service.

Stone Crab is the common name used for crabs of the genus Menippe found in Florida and other southeastern U.S. waters. Menippe mercenaria is one of the species most commonly associated with the commercial fishery.
The fishery allows eligible claws to be harvested while the crab is returned to the water. Stone Crabs have the natural ability to regenerate their claws. Harvesting is managed under regulations designed to conserve and responsibly manage the resource.

When claws are being served as the main course, a useful guideline is approximately 1.5 lb per person. For example, 3 lb may serve about two people and 6 lb about four. Adjust the amount based on appetite, menu, and side dishes.
